1/2 baby English cucumber, cut into 12 slices
1/4 cup tomato bruschetta topping
1 oz. ricotta salata cheese, crumbled
Directions

1. Top crackers with remaining ingredients.

 

2. Special Extra - Garnish with shredded fresh basil leaves before serving.

 

3. Bumper Crop of Summer Tomatoes? You can easily make your own tomato bruschetta topping for preparing these tasty snacks. Combine 1 cup chopped seeded tomatoes (any kind - cherry, pear, heirloom) with 2 Tbsp. chopped red onions, 2 Tbsp. extra virgin olive oil, 1 tsp. red wine vinegar and a few slivered basil leaves. Let stand 5 min. Use 1/4 cup of the homemade bruschetta topping to prepare this recipe. Refrigerate remaining bruschetta topping for another use.

 

4. Substitute- 1/4 cup crumbled feta cheese for the ricotta salata cheese
